Shaved Summer Squash Salad with Basil and Feta

At this point in the season, we’re no strangers to cooking and devouring summer squash. While there are lots of ways to prepare it, we recommend pairing it with basil and feta for a refreshing take when temps hit triple digits.

Ingredients
- 1 pound mixed summer squash, sliced very thin
- 1/4 c basil leaves, coarsely torn
- 1 small red onion, sliced thin
- 1/2 lemon, juiced
- 1/3 c olive oil
- for seasoning salt & pepper
- 1 Tbsp greek yogurt
- 1/4 c sliced almonds, toasted
- 1/4 c feta, or vegan alternative
Instructions
Step 1
Combine squash, onions, and basil in a bowl.
Step 2
To make dressing, whisk lemon juice and yogurt in a small bowl. Drizzle in olive oil while whisking constantly, until emulsified.
Step 3
Toss squash with dressing, almonds and feta. Serve immediately.
