Apple Harvest Kale Salad

No matter the centerpiece of your feast, this salad is sure to be a hit, with classic colors and flavors that nod to the nostalgia of holidays past.

Ingredients

  • 1 bunch kale
  • 1 green onion, chopped
  • 1/3 c toasted pecans, roughly chopped
  • 1 honey crisp apple, sliced 1/4" thick
  • 1/2 c Manchego cheese, shredded
  • 1 1/2 Tbsp Dijon mustard (for dressing)
  • 1/4 c apple cider vinegar (for dressing)
  • 3 Tbsp white wine vinegar (for dressing)
  • 1/4 c olive oil (for dressing)
  • to taste salt (for dressing)

Instructions

Step 1

In a small bowl, whisk together dijon mustard and both vinegars. While whisking, slowly pour in olive oil and continue to whisk until emulsified. Season with salt to taste.

Step 2

Remove stalks from kale and wash, tearing leaves into small bite-sized pieces. Put kale in a large bowl and pour about half of the dressing onto the kale. Massage the dressing into the kale until it starts to turn a bit darker in color and wilt. Taste a piece of kale and if it needs more dressing, pour in more (you may not need it all, it depends on how big of a bunch of kale you use). Add green onion, cheese, and pecans to salad and toss. Top with sliced apples and serve.
