Arugula Salad with Blackberries, Goat Cheese, and Pistachios with Honey Mustard Dressing

Ingredients
- 1 Tbsp grain mustard
- 1 tsp dijon mustard
- 1 Tbsp honey
- 2 Tbsp olive oil
- 1 small lemon, juiced
- 1 tsp shallot, microplaned
- pinch salt and pepper
- 5 c arugula
- 1/2 c blackberries
- 2 Tbsp pistachios, crushed
- 2 Tbsp goat cheese, crumbled
- pinch fresh cracked pepper
Instructions
Step 1
Place grain mustard, dijon mustard, honey, olive oil, lemon juice, shallot and pinch of salt and pepper into a small bowl and mix until well combined.
Step 2
In a large mixing bowl add the washed arugula and blackberries. Add crushed pistachios and Honey Mustard Dressing. Mix until well combined and plate amongst two bowls.
Step 3
Crumble 1 tbsp of goat cheese over each salad bowl and a pinch of pepper.
