Cucumber Salad with Almond Picada, Feta & Honey

Ingredients

  • 2 medium cucumbers, cut in 1" chunks
  • 1 small shallot, sliced thin
  • 1/4 c roasted almonds, coarsely chopped
  • 1 lemon, juiced
  • 4 Tbsp olive oil
  • 4 Tbsp parsley, coarsely chopped
  • 4 Tbsp mint, coarsely chopped
  • 2 - 4 ounces vegan feta cheese, grated or crumbled
  • to taste salt and pepper
  • 2 Tbsp honey

Instructions

Step 1

Place cucumbers in a large bowl and set aside. In a medium bowl, combine shallots, almonds, lemon juice, olive oil, parsley, and mint.

Step 2

Stir to combine, then toss with cucumbers. Add feta and toss gently. Season to taste with salt and pepper. Place on serving platter, drizzle with honey and serve.
