Ingredients

  • 1 head orange cauliflower
  • 2 tbsp olive oil
  • to taste salt
  • 1 tsp freshly ground black pepper
  • 1 tsp lemon zest
  • 1/4 c almonds, sliced, toasted (for garnish)
  • 2 tbsp fresh parsley, chopped (for garnish)
  • LEMON-PEPPER TAHINI SAUCE
  • 1/2 c tahini
  • 1/4 c lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp freshly ground black pepper
  • 3 tbsp warm water (more as needed)
  • to taste salt

Instructions

Step 1

Preheat your oven to 400°F (200°C).

Remove the leaves from the cauliflower and trim the stem so that the cauliflower can sit flat, being careful not to cut too close to the florets.

Place the cauliflower head in a baking dish. Drizzle with olive oil and rub to coat the entire surface. Season generously with salt and sprinkle with black pepper and lemon zest.
