Golden Orange Cauliflower with Zesty Lemon-Pepper Tahini and Toasted Almonds

Ingredients
- 1 head orange cauliflower
- 2 tbsp olive oil
- to taste salt
- 1 tsp freshly ground black pepper
- 1 tsp lemon zest
- 1/4 c almonds, sliced, toasted (for garnish)
- 2 tbsp fresh parsley, chopped (for garnish)
- LEMON-PEPPER TAHINI SAUCE
- 1/2 c tahini
- 1/4 c lemon juice
- 2 cloves garlic, minced
- 1/2 tsp freshly ground black pepper
- 3 tbsp warm water (more as needed)

Instructions
Step 1
Preheat your oven to 400°F (200°C).
Step 2
Remove the leaves from the cauliflower and trim the stem so that the cauliflower can sit flat, being careful not to cut too close to the florets.

Place the cauliflower head in a baking dish. Drizzle with olive oil and rub to coat the entire surface. Season generously with salt and sprinkle with black pepper and lemon zest.

Roast in the preheated oven until the exterior is golden brown and a knife inserted into the center meets little resistance, about 40 to 60 minutes, depending on the size.

While the cauliflower is roasting, prepare the Lemon-Pepper Tahini Sauce. In a bowl, whisk together tahini, lemon juice, minced garlic, black pepper, and salt. Add warm water a tablespoon at a time, whisking until the sauce reaches a pourable consistency.

Once the cauliflower is done, let it rest for a few minutes. Then, transfer it to a serving platter.

Drizzle the cauliflower with the Lemon-Pepper Tahini Sauce, ensuring it covers the top and sides.
