Home Fries with Romesco & Fried Egg

We love recipes for make-ahead sauces and condiments that can elevate the simplest supper to the realm of the sublime. Romesco is a Spanish staple that dresses up eggs, potatoes, grilled or roasted meat and seafood. We’ve even been known to scoop it up alone with warm tortillas for a snack. Romesco starts with roasted peppers and tomatoes and blends in toasted almonds and bread for added body and heft. Here, we serve it with diner-style home fries and a fried egg for a 10 minute dinner straight from your fridge and pantry.
Ingredients
- 6 green onions
- 1 lb yukon gold potatoes, srubbed & cut into thin half moons
- 4 eggs
- 1/4 c olive oil, divided
- 1/2 c romesco sauce
- to taste salt
- to taste pepper
Instructions
Step 1
Heat half of the olive oil in a large skillet or griddle. Add onions and potatoes and saute over medium high heat until potatoes are cooked through and crispy. Season to taste with salt and pepper.
Step 2
While potatoes are cooking, fry eggs in a separate skillet in olive oil sunny side up.
Step 3
Serve home fries with fried eggs and a generous dollop of romesco sauce.
