Jaskrit’s Berry Chia Pudding

Refresh your mornings with this chia pudding by Chef Jaskrit Bhalla, infused with fresh mint and topped with juicy berries and edible violas. This recipe brings together the highest prana, or life energy, from homegrown produce, making it a perfect blend of creamy texture and vibrant flavors to start your day right.

Ingredients

  • 1/2 cup Chia Seeds
  • 2 cups Coconut Milk (or any milk of your choice)
  • 1/4 cup Maple Syrup or Honey
  • 1 tsp vanilla extract
  • 1/2 cup Fresh Berries
  • 2 tbsp Fresh Mint Leaves
  • edible flowers of your choice

Instructions

Prepare the Chia Pudding:

  • In a medium-sized bowl, combine the chia seeds, almond milk, maple syrup or honey, and vanilla extract. Stir well to ensure the chia seeds are evenly distributed.

  • Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, until the chia seeds have absorbed the liquid and the mixture has thickened to a pudding-like consistency.

Prepare the Toppings:

  • Use Gardena's HerbCut shears to strip the mint leaves from their stems and finely chop them.

Assemble the Pudding:

  • Once the chia pudding has set, give it a good stir to break up any clumps.

  • Divide the pudding evenly into 4 serving bowls or glasses.

  • Top each serving with berries and/or other fresh fruit, chopped mint leaves, and a few edible violas for a beautiful and flavorful garnish.
