Jaskrit’s Herbal Breakfast Tea & Toast

Start your day with a refreshing herbal tea and toast combination. Fresh mint, sage and cilantro brighten your day, while a side of cucumbers adds a crisp touch. Inspired by Chef Jaskrit Bhalla's Ayurvedic practices, this breakfast pairs perfectly with a soft-boiled egg for a complete and satisfying meal.
Ingredients
- 4 cups filtered water
- 1/4 cup fresh mint leaves
- 1/4 cup fresh sage leaves
- 2 tbsp honey
- 1 lemon, sliced
- 2 slices whole grain or sourdough bread
- 2 tbsp ghee (clarified butter) or olive oil
- 1/2 avocado
- to taste salt and pepper
- 1/4 cup fresh cilantro
- 1/4 cup fresh dill
- 1 (optional) cucumber
- 4 soft-boiled eggs
Instructions
Prepare the Herby Tea:
In a saucepan, bring 4 cups of water to a boil.
Add the fresh mint and cilantro leaves. Reduce heat and let it simmer for 5 minutes.
Remove from heat and strain the tea into a teapot or individual cups.
Stir in honey to taste and add a slice of lemon to each cup.
Prepare the Toast:
While the tea is brewing, toast the slices of bread to your desired level of crispness.
Spread the ghee evenly over each slice of toast.
Spread the mashed avocado evenly over each slice of toast.
Sprinkle the chopped cilantro and parsley leaves on top of the ghee. Season with salt and pepper to taste.
Optional Additions:
For a refreshing side, serve with sliced cucumber.
For added protein and a satisfying touch, prepare soft-boiled eggs. To do this, bring a pot of water to a gentle boil, carefully lower the eggs into the water, and cook for 6-7 minutes. Transfer the eggs to a bowl of ice water to stop the cooking process, then peel and serve alongside the toast.
Serve:
Arrange the herby toast on plates and pour the freshly brewed herbal tea into cups.
Optionally, add the sliced cucumbers and soft-boiled eggs to complete the meal.
