Pan con Tomate
That’s exactly what inspired this recipe featuring only four simple ingredients: bread, olive oil, garlic, and tomatoes. Feel free to take liberties with additional toppings too, but be sure to try this in its simple glory first to revel in what good ingredients can do all by themselves.

Ingredients

  • 2 - 3 slices sourdough or rustic, country bread
  • 1 - 2 perfectly ripe tomatoes
  • 4 Tbsp olive oil
  • 1 clove garlic, unpeeled and cut lengthwise in half
  • to taste salt

Instructions

Step 1

Preheat oven to 350. Place slices of bread on a baking sheet and bake until bread is dried out and lightly toasted, turning over halfway through cooking. This should take about 25-30 minutes.

Step 2

Meanwhile, cut a thin slice off the bottom of the tomato. Starting from the cut-off end, grate the tomato over a plate using the coarse holes of a box grater until all you’re left with is the skin. Discard the tomato skin.

Step 3

Remove bread from the oven and while it’s still warm, rub one side with the cut side of the garlic clove and drizzle with olive oil.

Step 4

Spoon grated tomato on top and sprinkle with coarse salt. Let the tomato soak into the bread, drizzle with additional olive oil and serve at room temperature.
