Roasted Red Pepper Spread

Here’s your week’s secret weapon. Throw some roasted peppers and tomatoes in the food processor with cream cheese, sour cream and some aromatics, and walk away with something far greater than the sum of its parts. Party dip for book club, mysteriously delicious sandwich spread, afterschool carrot dipper - it’s the gift that keeps on giving.
Ingredients
- 6-8 small sweet peppers, roasted, peeled & de-seeded
- 4 green onions, sliced
- 1/2 c cilantro, leves & stems
- 1/2 c cherry tomatoes, roasted & cooled
- 8 oz cream cheese
- 1/2 c sour cream or yogurt
- 2 tsp cumin
- 1 tsp smoked paprika
- pinch of salt
Instructions
Step 1
Place all ingredients in the bowl of a food processor and blend until smooth.
Step 2
Serve with chips, pita, or crackers as a party dip, or enjoy as a life-changing sandwich spread.
