Salsa Verde

File it under “can’t live without” - this blender sauce is magic on everything from grilled meat to plain toast. We love it with fried eggs, on tacos, and dolloped over warm rice. Use the best olive oil you can get your hands on for this - the grassy flavors of a high quality oil play very, very nicely with salty capers, savory anchovy and bunches of fresh herbs. And speaking of anchovies - throw them in even if you don’t think you’re a fan. They provide an elusive note that’s hard to identify but totally addictive.
Ingredients
- 1 lemon
- 1 small clove garlic
- 2 anchovies
- 2 Tbsp capers
- pinch of salt
- 1/2 c olive oil
Instructions
Step 1
Place herbs, garlic, anchovies, and capers in food processor or blender and pulse a couple of times. Squeeze half the lemon over the mixture, then with the machine running, slowly drizzle in the olive oil until the sauce comes together, but still has some texture.
Step 2
Taste and add lemon juice or salt as needed.
