Sea Bass with Roasted Veggies

Ingredients

  • 3/4 lb sea bass
  • 2 Tbsp olive oil
  • 3 Tbsp lemon zest
  • 1/2 tsp salt
  • 1/8 tsp fresh cracked pepper
  • 2 zucchini, sliced 1/4 inch thick
  • 1 lemon, sliced
  • 1 c cherry tomatoes
  • pinch salt and pepper
  • 1/4 c fresh basil leaves
  • 1 lemon, for serving

Instructions

Step 1

Preheat the oven to 425 degrees F. 

Step 2

Rinse and pat dry the sea bass - set aside.

Step 3

Zest lemons, mix with salt and pepper to create a rub.

Step 4

Drizzle 1 tbsp of olive oil over the fish, pat the lemon zest mixture all over the top and sides of the fish.

Step 5

On a lined or greased baking sheet mix the zucchini slices, lemon slices and cherry tomatoes with 1 tbsp olive oil and a pinch of both salt and pepper.

Step 6

Lay the sliced zucchini, lemon, and cherry tomatoes across the surface of the baking sheet. Lay the seasoned fish over the top.

Step 7

Cook for 15-20 minutes depending on how you prefer your fish cooked. Take the fish out of the oven and put onto a separate plate.

Step 8

Place the baking sheet with sliced zucchini, lemons, and cherry tomatoes back into the oven for 2-3 minutes under the broiler to brown up.

Step 9

Once browned, lay the fish back over the top. Garnish with basil leaves and a sliced lemon.
