Superfood Salad

This great recipe comes to us from Meatless Monday!
Ingredients
- 6 ounces greens mix of baby kale, baby swiss chard, and spinach
- 1/2 c blueberries
- 3/4 c strawberries, sliced
- 1/4 c shredded coconut
- 1/2 c roughly chopped almonds
- 1/3 c lemon juice (for dressing)
- 3 Tbsp pomegranate juice (for dressing)
- 1 tsp agave nectar or honey (for dressing)
- 2/3 c olive oil (for dressing)
Instructions
Step 1
Combine all salad ingredients in a large salad bowl.
Step 2
Whisk the dressing ingredients together in a separate bowl and toss with the salad.
Step 3
Serve and enjoy!
