Superfood Salad
This delicious salad is made with kale and greens, as well as strawberries, blueberries, coconut, almonds, lemon, pomegranate juice and olive oil to keep your body in top shape!

This great recipe comes to us from Meatless Monday!

Ingredients

  • 6 ounces greens mix of baby kale, baby swiss chard, and spinach
  • 1/2 c blueberries
  • 3/4 c strawberries, sliced
  • 1/4 c shredded coconut
  • 1/2 c roughly chopped almonds
  • 1/3 c lemon juice (for dressing)
  • 3 Tbsp pomegranate juice (for dressing)
  • 1 tsp agave nectar or honey (for dressing)
  • 2/3 c olive oil (for dressing)

Instructions

Step 1

Combine all salad ingredients in a large salad bowl.

Step 2

Whisk the dressing ingredients together in a separate bowl and toss with the salad.

Step 3

Serve and enjoy!
