Sweet-Tart Pepper Relish
Peppers are good for more than just a spicy kick. This recipe celebrates the sweet side of life with sweet peppers and raisins. Some bright acidity from sherry vinegar balances everything out for a quick and delicious spread.

Ingredients

  • 1 1/2 Tbsp dried currants or chopped yellow raisins
  • 2 tsp sherry vinegar
  • 1/2 tsp warm water
  • 1/2 pound sweet peppers, roasted and peeled
  • 3 Tbsp pine nuts
  • 1 Tbsp chopped basil or arugula
  • 2 small garlic cloves, minced
  • 3 Tbsp extra virgin olive oil
  • 1 - 2 Tbsp sweet sherry or sweet marsala (optional)
  • to taste salt

Instructions

Step 1

In a small bowl, combine currants, vinegar and warm water. Let sit 10 minutes. Add remaining ingredients, including pepper juice.

Step 2

Taste to adjust vinegar and salt if necessary.
