Tajin Cucumbers & Summer Lettuce with Coconut Yogurt

Ingredients
- 1 lb mini cucumbers, slice in half lengthwise and cut crosswise into 2″ pieces
- 1 small head summer lettuce
- 6 leaves genovese basil
- 2 tsp tajin
- 1/4 c toasted pepitas
- 1 c coconut yogurt (preferred brand: Anita's Coconut Yogurt)
- 1 lime
- 3 Tbsp olive oil
- 1 tsp maldon salt
Instructions
Step 1
In a medium bowl, toss cucumbers with olive oil, zest, and juice of 1 lime.
Step 2
With a spoon, spread the coconut yogurt evenly on a plate. Tear large pieces of summer lettuce over the coconut yogurt.
Step 3
Evenly place the cucumbers on top of the lettuce. Sprinkle tajin over the cucumbers. Garnish with toasted pepitas and genovese basil.
Step 4
Serve immediately!
