Texas Harvest Salad
Fresh greens, watermelon radish, and sweet apples complement butternut squash that’s been raised to perfection. Pair your finished salad with classic barbecue - or let it shine all on its own.

Ingredients

  • 1 c cubed butternut squash, roasted with olive oil, salt & pepper
  • 1 small apple, cubed
  • 1 medium watermelon radish, sliced as thinly as possible
  • 2 handfuls greens of choice, washed and spun dry
  • 1/4 c apple cider vinegar
  • 1 tsp whole grain mustard
  • 1/2 c olive oil
  • 1/4 c pumpkin seeds, lightly toasted
  • pinch flaky sea salt, such as Maldon

Instructions

Step 1

Peel butternut squash and cut into cubes. Drizzle olive oil over the cubes and season with salt and pepper.

Step 2

Place them on a baking sheet and cook in an oven at 425F for about 40 minutes. (Time will vary depending on the size of your cubes.)

Step 3

Make dressing by combing apple cider vinegar, whole grain mustard, and olive oil. Stir until fully incorporated.

Step 4

Combine all ingredients in a large salad bowl or serving plate and enjoy!
