Thai Peanut Quinoa Salad
Tossed in a flavorful peanut dressing and topped with crushed peanuts, cilantro, and lime juice, this vibrant salad is crafted to round out just about any meal. Did we mention it’s gluten-free, dairy-free, and totally vegan? Talk about a crowd-pleaser.

Ingredients

  • 1/2 c quinoa, uncooked (for the salad)
  • 1 c water (for the salad)
  • 4 - 5 c shredded mix of cabbage, carrots, broccoli slaw (for the salad)
  • 1 c sliced snap peas (for the salad)
  • 1 red bell pepper, thinly sliced (for the salad)
  • 6 green onions, thinly sliced (for the salad)
  • 1/2 c cilantro, roughly chopped (for the salad)
  • 1/2 c dry roasted peanuts, roughly chopped, plus additional for topping (for the salad)
  • 2 tsp sesame seeds (for the salad)
  • for serving lime wedges (for the salad)
  • 1/3 c natural peanut butter (for the dressing)
  • 1/4 c coconut aminos or soy sauce (for the dressing)
  • 3 Tbsp lime juice (for the dressing)
  • 2 tsp rice vinegar (for the dressing)
  • 1 1/2 tsp toasted sesame oil (for the dressing)
  • 1 tsp minced fresh ginger, or 1/4 tsp ground ginger (for the dressing)
  • 1 clove garlic, minced or 1/2 tsp garlic powder (for the dressing)
  • 1/2 tsp red pepper flakes (for the dressing)
  • 1/2 tsp sea salt (for the dressing)
  • if needed warm water to thin

Instructions

For the Quinoa:

Step 1

Rinse the quinoa in a fine-mesh strainer with water.

Step 2

In a small pot, combine the rinsed quinoa and water. Over medium heat, bring to a boil. Gently reduce the heat to medium-low and simmer until all water is absorbed.

Step 3

Remove the quinoa from heat, cover the pot, and let it rest for 5-10 minutes. 4. Uncover the pot and fluff the quinoa with a fork. Set it aside to cool.

For the Salad and Dressing:

Step 1

In a bowl combine the cabbage mix, snap peas, red bell pepper, green onion, cilantro, peanuts, sesame seeds, and cooled quinoa.

Step 2

For the dressing, combine all of the ingredients and whisk mix together well. If needed, add warm water 1 teaspoon at a time to achieve a smooth dressing-like consistency. This will depend on the consistency of the peanut butter used.

Step 3

Pour dressing over the salad and stir gently to combine.

Step 4

To serve, top with chopped peanuts, cilantro, and a squeeze of lime juice.
