The Kusina Herb Rice

Ingredients
- 2 c basmati rice, fully rinsed and soaked in water for 30 minutes
- 3 c water
- 1/2 c unsalted cashews, roughly chopped
- 1/2 c golden raisins
- 1/4 c parsley, chopped
- 1/4 c cilantro, chopped
- 1/4 c genovese basil, chiffonade
- 2 limes
- for topping crispy shallots, optional
Instructions
Step 1
Cook basmati rice according to the package.
Step 2
Transfer the basmati rice into a bowl and cool completely. About 30 minutes.
Step 3
When the rice is cooled at room temperature, add in cashews, golden raisins, and herbs (chopped parsley, cilantro, and genovese basil). Mix until well combined.
Step 4
Zest and juice limes over the rice. Season with salt and pepper.
Step 5
Garnish with crispy shallots (if desired).
Step 6
Serve at room temperature and enjoy!
