Valerie's Kale Salad

Ingredients

  • 1 pound Prepared Kale
  • 1 avocado, sliced
  • 1 Cucumber
  • 1/2 cup Almonds
  • 2 Tbsp Black Sesame Seeds
  • 1/2 cup Scallions
  • Lots! Fresh Cilantro
  • 3 ounces Seasoned Rice Vinegar
  • 2 ounces Orange Juice
  • 1 ounce Sesame Oil
  • 1 ounce Agave
  • 1 ounce Ginger
  • 1 tbsp Soy Sauce

Instructions

Prepare the Ingredients:

  1. Chop the kale and place it in a large salad bowl.

  2. Slice the avocado and cucumber. Set aside.

  3. Toast the sliced almonds if not already toasted.

  4. Slice the scallions and tear the cilantro.

Make the Dressing:

  1. In a small bowl or jar, whisk together the seasoned rice vinegar, orange juice, sesame oil, agave, minced ginger, and soy sauce until well combined.

Assemble the Salad:
