Veggie Burgers

Ingredients

  • 1 c sweet potato
  • 2 cans black beans, drained, rinsed, and patted dry
  • 1 head butter lettuce
  • 3 Tbsp olive oil
  • 1 c yellow peppers, finely diced
  • 1 c yellow onion, finely diced
  • 1 Tbsp garlic, minced
  • 1 Tbsp fresno chili, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1 c panko breadcrumbs
  • 2 large eggs
  • 1 Tbsp worcestershire sauce
  • 1/8 tsp both salt and pepper

Instructions

Step 1

Preheat the oven to 350 degrees F. 

Step 2

Peel the sweet potato and cut into ¼ inch cubes. Toss with 1 tbsp olive oil, a pinch of both salt and pepper and place onto a lined baking sheet.

Step 3

Open and drain the two cans of black beans. Rinse well and lay onto a paper towel for the water to absorb and pat dry. Place onto a lined baking sheet. Once the oven is heated, put both the baking sheets of sweet potatoes and black beans into the oven. After 15 minutes take the black beans out of the oven. Turn the heat to 425 degrees F and cook the sweet potatoes for another 5 minutes, until tender. Set aside to cool.

Step 4

Heat a cast iron to medium/high heat. Add 1 tbsp olive oil and the finely diced pepper and onion, cook for 3 minutes. Meanwhile, mince the garlic then add into the pepper and onion mixture. Cook for another 2 minutes. Take off the heat and blot any excess liquid or oil, set aside to cool.

Step 5

Place all ingredients into a food processor: roasted sweet potato, black beans, sautéed peppers, onion, garlic, minced fresno chili, chili powder, ground cumin, smoked paprika, garlic powder, panko bread crumbs, 2 large eggs, worcestershire sauce, salt and pepper. Pulse for about 15 seconds until the ingredients are blended up a bit. 

Step 6

With fresh washed hands, take about ½ cup of the mixture, roll and flatten into a patty. Repeat until you have made 6 patties. 

Step 7

When ready to cook, heat a large pan to medium/high heat. Drizzle with 1 tbsp olive oil, once hot add the patties and allow to cook for 3 minutes then flip and cook for another 3-5 minutes (you may have to do this in two sessions- do not overcrowd the pan). The patties will be ready once browned and firm to the touch.

Step 8

Garnish with all your favorite burger fixings and enjoy!
