Harvesting tips

These eggplants are a miniature variety so they should be harvested when they are 2-4". Their color will fade if they are left on the vine for too long and will turn yellow when they are overripe.

The more you harvest, the more they will grow - remember to pick eggplants to spur continuous growth. Eggplant plants will stand up to vigorous pruning - they’ll grow tall unless the tops of the branches are clipped when the plant reaches a height of around 24".
