Rainbow Veggie Sandwich

Ingredients

  • 2 slices sourdough bread
  • 3 Tbsp hummus
  • 1 c red leaf lettuce
  • 1/3 c red cabbage, shredded
  • 1/4 c radishes, thinly sliced
  • 1 tomato, thinly sliced
  • 1/3 c carrots, shredded
  • 1 small yellow pepper, thinly sliced
  • 2 Persian cucumbers, thinly sliced
  • 1/3 c sprouts
  • 1/2 avocado, smashed
  • pinch both salt and pepper

Instructions

Step 1

Wash and prepare all of the veggies - set aside.

Step 2

Spread hummus on one piece of bread and smear ½ an avocado on the other piece of bread, sprinkle with both salt and pepper.

Step 3

Stack all the veggies in rainbow order, cut in half, and enjoy!
