Harvesting tips

Komatsuna can be harvested at any stage! When it is small and in its early stages, it can be prepared like spinach, but as it matures it can be treated more like cabbage. Its flavor will grow stronger and hotter as the leaves grow and mature. It is great in used in salads, in stir-fries, added to soups and stews, or pickled.
